Bear in mind that if you are facing someone who would have significant resources to attack your volumes with, they can use AES-NI to help break your encryption. Personally I am a fan of Serpent. If you are not going to use a cascading cipher and speed is not the utmost importance, pick anything other than AES.
And if anyone is really thinking of rebuilding the cascades, please do add custom cascades as an option. And go plainly nuts with things already mentioned in other threads here like Threefish and duplicate ciphers. (To more obfuscate things as this makes the possibilities even harder to predict, and thus harder to attack.)
